How to make Broccoli Soufflé Quiche
Easy Broccoli Soufflé Quiche
Broccoli soufflé quiche
Ingredients:
5 Eggs
10 pkg of frozen broccoli thawed and chopped in food processor or 2 cup fresh chopped in food processor or you can use fresh broccoli that has been brought to a boil a cooked for 2 minutes.
3/4 cup grated Swiss cheese
1 1/2 cup grated Cheddar cheese
1/4 tsp nutmeg
2T flour
3 T butter
1 cup milk
1/2 tsp salt
Dash black pepper
Putting it all together:
First start by heating up a large non stick frying pan with butter added on medium heat on the stove to create a white sauce. Once butter is melted add flour and stir and continue to cook on medium heat until all of butter is absorbed and the mixture looks like a paste. Then add the milk slowly by adding a 1/4 cup at a time to the butter flour mixture. Be sure to keep stirring the milk into the butter flour mixture, continue this process to make a white sauce and all the milk has been added to the frying pan.
Continue to cook the milk flour mixture until it thickens and is smooth. Once all the milk is added and the white sauce looks smooth without any flour clumps, add the Swiss cheese and the cheddar cheese. Continue cooking at medium heat to melt the cheeses, stirring continuously to prevent sticking or burning, you may need to cut the heat down on your stove a notch or too, if it starts to boil, you only need to melt the cheese. Once the cheese is melted add the nutmeg, salt and pepper.
Next add the chopped broccoli. Note: When chopping broccoli in food processor you only need to pulse 3-4 times this will get the broccoli to about size of a pea.
Crack eggs out of shell and add to a medium sized bowl beat them together until smooth.
Remove broccoli cheese mixture from heat; add eggs that have been beat until smooth and mix well into the broccoli mixture until smooth.
Now, pour broccoli mixture into a soufflé dish, that has been sprayed with a cooking spray or you can also wipe with cooking oil to coat the soufflé dish.
Bake in pre-heated oven at 375 degrees for 35 to 40 minutes until the broccoli soufflé quiche starts to lightly brown on top. Test for doneness by taking a butter knife and insert it in the middle of the soufflé , when knife comes out clean the soufflé is done.
Serve as main course or side dish. The Broccoli Soufflé Quiche is a wonderful side dish and goes good well with fresh mixed greens salad and baked chicken.
